Chickpea Corn Patties

Hello Vantastic Family! Thank you so much for stopping by! Today I am bringing you all this delicious 10/10 recipe for chickpea & corn patties. They look similar to crab cakes but in my opinion they taste much better! Luckily I went through the trial and error for you all because initially they were falling apart and missing flavor. I honestly felt frustrated, but I am so glad that I pushed through becuase they are BOMB! And the great news is that you can prep and cook these in 30 mins. I know you are going to love them and I want to hear all about it. So let’s get into it!
What You Need
1 can of chickpeas (do not drain the liquid)
½ cup of can corn
½ red onion
½ bell pepper
1 teaspoon of Olive oil (for each set of patties)
1 cup of brown rice
1 tablespoon of Himalayan Salt
1 tablespoon of Pepper
2 1/2 tablespoons of Chipotle ground
1/4 cup of Cilantro
1 teaspoon of Cumming
1 1/2 teaspoon of Chilli powder
2 tablespoons of Garlic powder (I actually measured my garlic by the spirit in Auntie Tab's voice)
1 cup of Panko Breadcrumbs (The Kikkoman Japanese Style are vegan friendly)
Food Processor (a household stable)
Stove top griddle or frying pan (whatever works best for you)
Preparation
(It is very important that you follow my order for the preparation so that your outcome is desirable. If you go out of order you may notice that the patties will fall apart.)
Pour the whole can of chickpeas, including the liquid into the food processor
Pour rice, chunked onions, and bell pepper into the food processor
Add the cumin and chilli powder
Chop the ingredients (This will mix them together also)
Remove the mixture from the food processor and into a mixing bowl
Add corn and panko breadcrumbs
Stir and mix in the corn and breadcrumbs
Add salt, pepper, chipotle ground, garlic, and cilantro
Stir the ingredients together until the consistency is sticky. (Your mixture must be sticky so it doesn’t fall apart when forming it into a patty/cake. You want it to stick to the spoon a little)
After reaching the right consistency you are going to form the mixture into cakes/patties. After I formed each one, I added it to a separate plate so that it would be ready for cooking.
Heat stove up stove and oil griddle with olive oil
Place pattie/cake onto the griddle and cook for about 3-4 mins. Flip pattie/cake to the other side and allow it to cook for 3-4 mins also. Flip the pattie again and cook to desired crispy-ness.
Place on a plate for cooling and add your choice of sauce or eat them plain. (Either way is DELICIOUS)
Tips
You can definitely store leftovers in an airtight container and refrigerate them for 1-2 days.
I suggest warming them in the oven or air fryer to give them a little crispier taste
A food process is a MUST for a great combination. I am not sure what it would be like without it.
All Panko Breadcrumbs are not vegan so make sure you read the ingredients if you use a different brand from the one I suggested.
